This is what we had for dinner last night. I made a couple of changes mostly because I used Buffalo flank steak instead of beef, and flour instead of cornstarch. I didn’t have any cornstarch, but didn’t know this until I had started fixing the meal so couldn’t go get it. LOL! But since when do I ever follow a recipe anyway?

Low Carb, Low Fat Southwest Chicken Soup
I just made this for lunch and WOW is it good! And it was easy to make as well! Which is a must for me to be able to stick to any diet. I’m lazy and I just don’t want to have to go through a ton of steps to make a good meal for my family. Which is why we usually turn to something easier, not so good for us stuff. But this took a total of 30 minutes to make from start to finish!
Inspiration Comes From The Strangest Places
So here’s our brand new (new to us) Lincoln Towncar. We bought it the day before New Years Eve! Believe it or not, we don’t owe anything on it either! That’s right, NO car payments!! WOOT! We traded in my cute, sweet, adorable Beetle and paid a few K in cash and we own it outright! That’s a testament to how well our business is doing, because we didn’t sacrifice or really even save for this! No, we still have savings in the bank, money for our business, money for rent, bills and fun on TOP of buying this car!
Thankful Thursday – It’s All About Me
I guess since I didn’t post for two days, that I need to make up for that by posting twice in one day! LOL! This Thankful Thursday is all about me though. I’m thankful for so much in my life, but I have a hard time being thankful for myself. So today I want to be grateful about me!

This year instead of making resolutions, I’m making goals. Every year I’ve made resolutions and end up failing at them. Of course that makes me feel horrible and ends up making things worse, such as gaining weight. LOL! When I make a resolution to lose weight, I fail and gain weight instead. Not productive at all. So this year, instead of making resolutions I’m making goals.

Bountiful Baskets – Local Fruit & Veggies
A couple of weeks ago, a friend & fellow homeschooler, mentioned that she was just getting home from her Co-op with a ton of fruits and veggies for a GREAT price. Of course I asked her where she got them and how much, and if there was any link she could send me. She sent me the link to Bountiful Baskets Food Co-op.
Saturday’s Project
So this weekend we decided that we needed a new BBQ. Not because our old one wasn’t working, mostly because it’s just kinda old, and small and Lowes was having a sale on BBQ’s. We stopped by there and looked at the ones they had on sale and found just about the perfect one for our family. It’s a pretty big one, not horribly huge, but big enough to have 6 or so steaks on the grill, plus it has a side burner for sauces and a top rack for buns and things. Since we were having a BBQ with my mom & sister for the 4th, we figured it was perfect and we got it. Then the boys and Steve had to put it together. hehehe, while I took pictures! If I was going to have to be in the hot sun, I figured I would take some pictures of their progress!
